Pumpkin with mushrooms and potatoes


Ingredients for making pumpkin with mushrooms and potatoes.

  1. Pumpkin 1 medium
  2. Potato 4 medium root vegetables
  3. Onion ½ medium onion
  4. Champignons (fresh or frozen) 12 medium pieces
  5. Olive oil 50 grams
  6. Garlic 3 cloves

Cooking pumpkin with mushrooms and potatoes:

Step 1: prepare the mushrooms.

Wash the mushrooms thoroughly under running water and clean. From the hats to remove the skin and legs just scrape with a knife. Then cut them on a cutting board approximately as shown in the picture below. Peel half of the onion from the husk and cut into thin half rings. I agree the onion slicing procedure is very tearful, but you will agree that almost any dish can do without onions. So, chopped the onion. Now we put the pan on the fire, pour olive oil and wait until it is heated. Then we put the onion in it, reduce the heat to medium, salt it a little and periodically stir it with a wooden spatula and fry the onion over medium heat. After 5-7 minutes, add chopped mushrooms to it. We make the fire above the "average" and fry the mushroom-onion mass for 7-8 minutes.

Step 2: prepare the pumpkin and potatoes.

If the potato is young, then you do not need to peel it - just soak it for 2 minutes in water and then just scrape the skin with a knife. Otherwise, you still have to peel the potatoes, rinse under running water and cut into cubes about 2x2 cm. Cut the pumpkin in half and remove the seeds. Then, cut off the peel from it and cut into approximately the same slices as potatoes. Peel the garlic and cut each clove in half.

Step 3: bake the dish.

Turn on the oven, set the temperature to 200 degrees. Pour some olive oil on a baking sheet, spread it with a brush over the entire surface of the baking sheet. Then we start spreading the ingredients. First, put the potatoes and pumpkin, season them with caraway seeds, saffron and turmeric, add a little salt and mix thoroughly. Then put onion and mushroom mass (along with the oil in which it was fried) and garlic on a baking sheet. Mix everything again and place the baking sheet in the oven. bake at a temperature of 200 degrees for about 45-60 minutes. ready-made pumpkin and potatoes should be very soft.

Step 4: serve to the table.

We take out the baking sheet with the finished dish from the oven, put it with a spatula in portions on plates and serve. It can be served as a side dish for meat. Enjoy your meal!
