Within 12 to 24 hours, you’ll notice bubbling and foaming in the top of the bottle. This is normal. If you add fruit or herbs, this may bubble into the airlock and get stuck. This is normal too, but you’ll want to clean it out well and reset it. A clogged airlock could lead to an explosion.

  • 3 racks baby back ribs (about 5 pounds)
  • ¼ cup plus 2 tablespoons soy sauce
  • ¼ cup plus 2 tablespoons whiskey

  • ¼ cup fish sauce

Arrange the rib racks in a large glass or ceramic baking dish, overlapping them slightly. In a medium bowl, whisk the soy sauce with the whiskey, honey, ginger, white pepper, sesame oil, cinnamon and nutmeg. Pour the marinade over the ribs and turn to coat. Cover and refrigerate for 4 hours.

In a small bowl, combine the honey with the hot water. In a medium bowl, combine the lime juice with the fish sauce, soy sauce, pepper flakes, cilantro and sugar stir until the sugar is dissolved.

Preheat the oven to 300°. Line a large rimmed baking sheet with foil. Arrange the ribs on the baking sheet, meaty side up. Roast for about 2 hours, until tender. Baste the ribs with the honey mixture and roast for another 15 minutes, until browned and glossy. Remove the ribs from the oven and baste again with the honey mixture.

Preheat a grill. Grill the ribs over moderately high heat, turning once, until lightly charred, about 4 minutes. Transfer the racks to a cutting board and cut into individual ribs. Arrange the ribs on a platter and serve the dipping sauce alongside.

2 cups whole almonds, skins on
1/4 cup sugar
1/2 teaspoon salt
2 tablespoons honey
2 tablespoons water
2 teaspoons almond or vegetable oil

Spread the almonds in a single layer in a shallow ungreased baking pan and place in a cold oven. Bake at 350 degrees F, stirring occasionally, until the internal color of nuts is tan (12 to 15 minutes). Remove from oven and set aside.

Cooked to Perfection

I am kind of a perfectionist when it comes to grilled chicken. Chicken can so easily be underdone or become overdone with grilling. So many times I will go do a cookout or BBQ and I will see people cutting into the chicken to check the doneness. Please, I am begging you.. DON’T DO THAT! You are ruining your perfectly good chicken, people! There is NO SHAME in using a digital meat thermometer to make sure you chicken is cooked perfectly.

There is no good reason to slice up your chicken in order to check doneness. Don’t leave it to chance either. The last thing you want to do is pull the chicken off the grill and find out it isn’t done and then have to put it back on in pieces to continue cooking it. Get it to 165-degrees internal temperature, pull it off the grill, and let it rest a few minutes. That is ALL it takes to have perfect chicken. I prefer the digital-read thermometers because they are the most accurate and they will give you a quick read. They are super cheap on Amazon and you can usually find them for under $10. It is SO worth the small investment! I can’t emphasize this enough!
