Chicken Rice Noodle Soup


Ingredients for Making Chicken Rice Noodle Soup

  1. Half carcass chicken (for broth)
  2. Rice noodles 0.5 kilograms
  3. Leek 1 stalk
  4. Red onion 1 piece (medium)
  5. Chili pepper 1 pc.
  6. Ginger slice 2 cm (root)
  7. Soy sauce to taste
  8. Coconut flakes 2 tbsp. spoons

Inventory:

Pan for cooking broth and noodles 2l - 2 pcs., Skimmer - 1 pc. (to remove foam), Colander - 1 pc., Cutting tool (knives) - 1 set, Shallow pan - 1 pc., Serving plate - 1 pc.

Cooking Chicken Rice Noodle Soup:

Step 1: Cook the chicken and chicken stock.

We take our half of the chicken carcass and, washing it under running water, put it in a pan. Topping up water in a saucepan (about 1.5 liters) - put on fire and bring to a boil. After our broth boils, carefully remove the foam with a slotted spoon. Reduce the heat to medium and bring to full readiness.

Step 2: Add the spices.

About 10-15 minutes before our broth is ready, add ginger root to the pan. So just a piece of the root and throw.

Step 3: Prepare peppers and onions.

Chilli pepper gently and carefully with a knife, cut lengthwise, remove the seeds from the inside and cut into thin strips. Red onion, after peeling it, cut into half rings, and leek in circles.

Step 4: Cook the noodles.

We take the second clean and empty pan, place the noodles in it, fill it with water and boil it. After boiling, recline in a colander and rinse with cold water.

Step 5: Cut the meat and mix the ingredients.

By this time, our chicken has already been cooked, so we take it out and use a knife to cut the meat into small pieces. We throw chopped leeks, chili peppers, red onions and chicken meat into the broth. Let it stand for 10 minutes on a small fire.

Step 6: Prepare Coconut.

Pour coconut flakes into a skillet and, again over low heat, lightly brown it.

Step 7: We serve to the table.

Arrange the finished noodles on plates, pour in the broth, sprinkle coconut flakes on top and lightly dress with soy sauce. All is ready. We serve to the table. Enjoy your meal!

Recipe Tips:

- - Coconut flakes should be taken only in white. The other is not good.

- - chicken should choose fresh and not frozen

- - Be sure to rinse the noodles with cold water after reclining into a colander. Rinse 2-3 times, otherwise it will stick together.
