Makes 4 Servings
8 ounces Beefeater or other London dry gin
1 1/2 ounces Cocchi Americano or Lillet Blanc
1 ounce Gran Classico
4 orange twists
Combine gin, Cocchi Americano, and Gran Classico in a large pitcher filled with ice. Stir until outside of pitcher is very cold, about 1 minute. Strain into chilled stemmed cocktail glasses or over rocks glasses filled with fresh ice. Garnish with orange twists.

White Negroni – a Trendy twist on the classic Negroni recipe
A traditional Negroni contains Gin, Campari, and Sweet Vermouth. The dark ruby color is an essential characteristic of the drink. And the same goes for Campari and Vermouth. But almost 20 years ago, at Vinexpo 2001 in Bordeaux, Wayne Collins created a totally new version – the white Negroni.
His trendy twist on the classic aperitif cocktail even made it into „The PDT Cocktail Book“ by Jim Meehan and the „3-ingredient Cocktails“ book by Robert Simonson. So let’s see what it is about this drink and how it came to life.
How to make a White Negroni (basic steps)
The White Negroni is easy to make and memorize: use just 1 ounce (2 tablespoons) of each of the elements above. You don’t even need a cocktail shaker. Simply stir it together in a cocktail mixing glass, or any glass you have on hand. Here are the basic steps:
- Mix. Add the ingredients to a mixing glass with 1 handful of ice and stir for 30 seconds. This chills the cocktail and dilutes it less than shaking in a cocktail shaker would.
- Strain and serve. Strain into a lowball glass filled with ice.

The mix of equal parts of sweet red vermouth, Campari, and gin means it is a balance of sweet, bitter, and herbal. Translation: it’s an extremely food friendly cocktail.
But even the best things are worthy of a riff every now and then. In the case of a Negroni one riff we turn to often is the white Negroni. The White Negroni was said to have been created by London mixologist, Wayne Collins, back in the early 2000s and he stirred together bitter Suze liqueur, the French aperitif Lillet, and gin. That version is a modern classic but we don’t find it to be particularly food friendly.
Enter our take on the white Negroni made with dry white vermouth, Cocchi Bianco aperitif, and a London style (read: herbaceous and juniper-y) gin. The result is a cocktail that lives on the taste spectrum between a refreshing Gin & Tonic and a Vermouth & Soda.
Yes, those are both go-to cocktails for tapas in Spain because they’re both very food friendly. As such this cocktail is refreshing, balanced, and pretty much begging to be served with your next meal.
A Word About The Liquors
- Dry White Vermouth: An aromatic fortified wine made by infusing a grape spirit base with a host of aromatics like flowers, herbs, and bark, you’ll come across both dry and sweet vermouth. Dry vermouth (aka white vermouth) is less sweet than red (aka sweet) vermouth. We use Dolin White Vermouth in this cocktail.
- Cocchi Americano: Like a less intense and less bitter take on spirits like Campari yet more bitter than Lillet, Cocchi Americano is an aperitif wine made with quinine. In other words, it’s the key to providing the cocktail’s bitter note. If you can’t find it, you can use Lillet though the end cocktail will be a little less bitter and sweeter.
- London-Style Gin: Classically, you want to use a “dry gin” for a Negroni meaning a gin that doesn’t have any added flavorings above and beyond the natural botanicals used in distilling. We like the balanced Sipsmith brand London Dry Gin for this cocktail.

Ingredients for a white negroni.
- Suze - is a bitter French aperitif . It is made from gentian root. When you start making a lot of cocktails, you'll find that you also start collecting different bitter liqueurs and aperitifs, like Campari and Fernet Branca. - Lillet Blanc - A floral, fruity aperitif wine.
- Gin - for this we used a Plymouth Gin - which gives it more floral and cucumber notes.
- Lemon - twist for garnish. Try to buy organic since you'll be dropping the lemon peel into your drink. Squeeze the juice and either store it in the fridge or freezer for your next cocktail using lemon juice - perhaps a New York Whiskey Sour?

Since it's so easy to make with tart cherry juice, cherries don't even have to be in season, but I love to garnish it with fresh cherries!

The gentian genus makes up a small and herbaceous group of wild plants, known for their beautiful blue and yellow flowers. They are tough to farm, but flourish above the tree line in the alpine meadows of Europe, Turkey, and the Americas. The root is extremely bitter, and for centuries was taken as a digestive aid and cure-all. Today, it is used as a bittering agent in a plethora of iconic cocktail ingredients. Aperol, Campari, and Angostura bitters all make use of it, but the best way to experience this grassy, mountain-meadowy goodness is in a gentian liqueur. These low alcohol aperitifs are light in color, making them perfect for mixed drinks. The tone does not adulterate a cocktail's color, and their earthy bitterness can add spice and surprise to an otherwise one dimensional drink.
The White Negroni is a fabulous use of the gentian's powers, and a downright brilliant twist on a bonafide classic. All of the flavor components of a classic Negroni are present, but only the gin remains verbatim. The bitter Campari is matched by the bitterness of the gentian liqueur, and the sweet vermouth is replaced by an aperitif wine like Lillet. Not only does this recipe go tit-for-tat with its ancestor, the ingredients are smartly chosen to be beautiful. Its milky white hue is a head-turning asset, and accordingly should never be shaken. For a spirit-forward variation, try dry vermouth instead of Lillet, or for something really special, take a crack at The Great Outdoors, one of our all-time favorites.
