Making honey cake with prunes:
Step 1: prepare the flour. You need to start cooking any baked goods with the preparation of flour. So, pour it into a sieve and sift it into any convenient bowl or plate. Due to sifting, the flour gets rid of flour lumps and is saturated with oxygen. Add soda to the prepared flour and mix everything thoroughly with a tablespoon or whisk.
Step 2: prepare the dough for the cake.
Next, we wash the eggs under running water, gently break them into the mixer bowl and beat at high speed for 4 minutes. Then add sugar and beat again. 3 to 4 minutes to a homogeneous state. After we reduce the speed to medium speed, pour in the honey and continue to whisk 1 minute.
Now it is necessary to introduce flour into the resulting mass, for this we reduce the speed of the mixer to small and add flour and soda in small parts. We should get a liquidish dough with a lush, soft texture.
Step 3: bake the cakes.Preheat the oven to 150 - 160 degrees Celsius. Cover the baking dish with baking paper and pour half the dough. In the preheated oven, remove the first cake and bake for 35 - 40 minutes until ready. Readiness can be determined using a regular match or toothpick. If the match remained clean after piercing the cake, then it can safely be taken out of the oven. And if the match left traces of raw dough, we continue to bake the cake for 7-10 minutes.
So, with kitchen tackles we get the finished honey cake from the oven and in any way convenient for you we remove it from the mold on a plate or cutting board. Then we cover the warm form with new baking paper and fill it with the remaining dough. Set the mold in the oven and bake the second cake in the same way as the first.
Step 4: prepare the prunes.
Put the prunes in a colander and rinse thoroughly under running water. After we transfer it to a plate, pour boiling water and leave it on 10 - 15 minutes. With the passage of the necessary time, drain the water, and put the softened prunes on a cutting board. If desired, the dried fruit can be chopped into small pieces or left whole.
Step 5: prepare the cream.
Now go to the cream, pour the cream into the bowl of the mixer and start whipping, gradually increasing the speed to maximum. Whip cream until stable solid peaks appear. Immediately after that add sugar with sour cream and a mixer, continue to whip a homogeneous, sweet cream.
Step 6: form a cake.
We return to the cakes, cut them lengthwise into two parts, so that it turns out 4 approximately equal in thickness to thin cake. We put any on a beautiful plate for serving and grease with the prepared cream, it will be enough 2 - 3 tablespoons.
Then spread a little prune, sprinkle with chopped walnuts and cover with a second thin crust. Grease it with cream again, add prunes and nuts.
We do the same with the third thin cake, which we close last. Lubricate it and the edges of the cake with cream, and decorate the pastries to your liking. We remove the finished cake in the refrigerator or other cool place and leave it on 4 - 6 hours soak in cream.
Step 7: serve the honey cake with prunes.
After a few hours, we get a beautiful, delicious cake and serve to the dessert table. As a drink, hot aromatic tea, coffee, as well as homemade compotes, juices, fruit and berry smoothies or cocoa are suitable. Honey cake with prunes - sweet, delicate pastries that melt in your mouth!
