Ingredients for making meat pies

Cooking meat pies:

Step 1: prepare the yeast.

We will prepare meat pies from yeast dough, for this we need to prepare the yeast, so first of all we pour the right amount of milk into the pan and put it on the burner. We turn on the temperature of the plate to an average level and with constant stirring with a tablespoon, heat the milk to a warm state, that is, to 35 - 40 degrees Celsius. Once the milk has warmed up, turn off the heat and set the pan aside. Then pour the warm milk into a glass, filling it in half. After that, add 1 tablespoon of sugar, dry yeast to the glass and mix everything thoroughly. Leave the mixture for 5 to 10 minutes until the yeast rises.

Step 2: prepare the dough.

Next, pour the rest of the milk from the pan into a large, deep bowl or other convenient container in which we will prepare the dough. With the passage of time, we pour the swollen yeast into the bowl and gradually add, in small portions, with constant stirring with a whisk, the sifted flour. At this stage, you need about 3 glasses. The dough should be slightly liquid, without lumps and a uniform consistency. The resulting dough is covered with a cloth towel or covered with a lid and left in a warm place for at least 4 hoursbut better all night. During this time, the dough will increase in size by about 2 times.

Step 3: prepare the onion.

Now we are going to prepare the meat filling for our baking. First of all, peel the onion from the husk, rinse under cold running water and lay on a cutting board. Using a sharp knife, cut it into small pieces of arbitrary shape, about 1 centimeter in size. We shred the chopped onion in a separate plate.

Step 4: prepare the meat filling.

We take the minced meat from the packaging and leave it to warm to room temperature, and while the meat is cooked, we will take onion. We turn on the temperature of the stove to an average level, pour a little vegetable oil into the pan and put it on the burner. In the preheated fat, shift the chopped onion and begin to fry until transparent and a light golden hue. For uniform cooking, it is best to periodically mix the onion slices with a kitchen spatula. This process will take you about 2 to 3 minutes. Then reduce the temperature of the stove and spread the ground beef in the pan. Fry it until the whole meat component changes color from red to gray, and this happens after about 15 - 20 minutes. Immediately after that, add salt and black pepper to taste and mix well our filling.

Step 5: knead the dough.

After 4 hours, we release the bowl of dough from the cloth towel and continue cooking. We wash chicken eggs under warm running water from various kinds of contaminants and 4 are broken directly into a container with dough, and 1 is broken into a separate cup. Then we add salt, sugar to the dough and whisk thoroughly knead the contents until smooth. Then we begin to gradually add the remaining part of the sifted flour, after 2.5 - 3 glasses, go to the batch with your hands and add the flour until the dough is no longer sticky. The resulting dough is left to rise approximately 1 - 2 hours.

Step 6: form the pies.

After the dough has risen again, sprinkle a flat surface with a small amount of flour and spread the dough. Divide it into 14 - 18 balls of approximately equal size and begin to roll each into an oval layer with a thickness of about 7 millimeters. Then we arm ourselves with a teaspoon and spread our meat filling in the middle of each. After that we tightly fasten their edges and proceed to the preparation of the baking sheet. Lubricate the bottom with vegetable oil or cover it with baking paper so that our pastries do not burn. Next, we lay the formed pies on the prepared pan with the seam down and with the help of a kitchen brush, grease them with the egg, which we left in a separate cup. We do this to ensure that the baked goods during baking are covered with a delicious golden crust.

Step 7: bake the dish.

Now let's start baking. In preheated to 200 degrees Celsius oven, set a baking sheet and bake pies for 15 - 20 minutes until ready. As soon as they are covered with a golden crust, we take out a baking sheet with the help of kitchen tacks and leave the baking to cool to room temperature.

Step 8: serve the meat patties.

- - Instead of ground beef, you can use any other, but rather meat assortment of several types of meat.
