Cooking Mustard Cheese Pie:

Step 1: prepare the flour.

So, first of all, we sift the flour through a sieve into a medium bowl. Thanks to this, the flour will get rid of excess lumps, enriched with oxygen from the air, and thereby the dough will turn out more gentle and airy.

Step 2: prepare the butter.

Rub the cold butter on a coarse grater and then transfer the ingredient to a deep bowl.

Step 3: prepare the dough.

So, pour the flour into a bowl with chopped butter. With clean, dry hands, carefully rub the ingredients until smooth. After that, add salt, sour cream to the container and break one egg. Again, mix everything well with either hands or a tablespoon. Knead the dough in a bowl until it becomes a homogeneous mass. We get chopped dough. At the end, we wrap the container with the test ingredient with cling film or wrap the dough itself in a film and put it in the refrigerator for 1 hour.

Step 4: prepare the cheese.

Hard cheese with a coarse grater rubbed into a clean plate. And so that the ingredient does not weather, we wrap the container with cling film and meanwhile set aside. Attention: since we do not salt the filling of the pie, salty varieties can be used for hard cheese.

Step 5: prepare the cake.

After the allotted time for tincture of the dough expires, we take out the test ingredient from the refrigerator, remove the cling film from the bowl, and put the dough on the kitchen table, crushed with flour. Knead the dough a couple of times with your hands and then form a ball out of it. Using a rolling pin, we roll out a round cake from the test ball, which in diameter should coincide with the diameter of the baking dish. After that, carefully shift the cake into the mold and level the dough with your hands over the entire area of ​​the container, not forgetting the sides of the mold. Attention: uneven edges of the dough can be cut with a knife and give the dough accuracy along the edge. So that in the process of baking, the cake does not swell, in all places we pierce it with a fork. And now bake the base of the pie in the oven for 15-20 minutes until golden crust appears at temperature 180 ° C. Immediately after this, using kitchen tackles, we take out the container with cakes from the oven and set aside to cool to a warm state.

Step 6: prepare the filling.

In a medium bowl we spread the grated cheese, Dijon mustard, sour cream, and also break the egg shell with a knife, and pour the yolk with protein into the same container with the ingredients. Pepper the ingredients to taste and now, using a tablespoon, thoroughly mix everything until a homogeneous mass is formed. That's all - the filling is ready!

Step 7: make a mustard-cheese cake.

Pour the filling on the baked cake and after - everything is carefully leveled with a tablespoon. Put the baking dish with the dish in the oven again and cook the pie for 30 minutes at a temperature 180 ° C. When the pastries are ready, you will feel this unforgettable aroma of hot just cooked dough and a browned crust of cheese and milk filling.

Step 8: serve the mustard-cheese cake.

We take out the finished mustard-cheese pie with the help of kitchen oven gloves from the oven and set aside to cool for another 15-20 minutes. And when the baking is a bit stiff, we transfer it to a serving dish or we can serve it in a baking dish so as not to spoil the appearance of the cake. Cut the pastries into batch pieces.
