Making pizza from Khrushchev dough:

Step 1: prepare the yeast.

In this pizza, the most important ingredient is the incomparable, ever fresh Khrushchev dough, which has not been stale for a long time. There are some completely easy secrets in its preparation that I will share with you with pleasure. First of all, put in a deep bowl the right amount of dry granular yeast, add salt to them and grind the ingredients with a tablespoon for several minutes. After we turn on the stove at medium temperature and put on it a stewpan with the right amount of pasteurized whole milk. Preheat the dairy product up to 35 - 38 degrees, the liquid should be slightly warm, but not hot, otherwise the yeast will not rise. Pour the milk heated to the desired temperature into a bowl with yeast, cover the container with a lid and place it in a warm place on 12 to 15 minutes.

Step 2: prepare the dough.

While yeast is brewing, take a sieve with a fine mesh and sift into the clean, dry bowl the right amount of wheat flour. After 12 - 15 minutes, add sugar and softened creamy margarine to the bowl with yeast. Mix the ingredients with a tablespoon while mixing the butter. Now we begin to introduce the sifted wheat flour in parts into the resulting mixture while kneading the dough with a wooden kitchen spoon. First, no more than 2 cups of flour will go. When it becomes difficult to mix the ingredients with a spoon, pour another half a glass of flour onto the kitchen table, put the dough on it and continue to knead it for 10 - 12 minutes. According to the consistency, the semi-finished flour product should turn out to be rather thick, heavy and will stick to your hands a little. After kneading, put the dough back in a bowl. We cover the container with a kitchen towel and put in the refrigerator for 5 - 6 hours. We don’t hide the flour that remained in the glass, it will be needed later, but for now, the dough is infused, we are preparing the filling.

Step 3: prepare the filling.

Open jars of olives and tomato sauce with a canned key. Drain the marinade from the olives, put the ingredient on a cutting board and cut it into 2 halves, as you like, in rings or slices. From the boiled pork and smoked chicken sausage remove the shell. Alternately, put the meat ingredients on a clean cutting board and cut into layers, rings, straws or cubes, the main thing is that the thickness of the pieces does not exceed 5 - 6 millimeters. Rub the cream cheese on a coarse grater directly into a deep plate. With hard cheese we cut off the paraffin crust with a knife, divide it into 2 equal parts, put one of them on a cutting board and cut it into layers with a thickness of up to 3-4 mm. Rub the second part of the cheese on a fine grater into a deep plate. Mushrooms, bell pepper, leek, rinse under running water and dry the vegetables with paper kitchen towels. Then we remove the roots from the mushrooms and onions, cut the stalk from the pepper and gut it from the seeds. Alternately, we lay the ingredients on a cutting board and cut the mushrooms in layers up to 3-4 mm thick. Leek shred in small rings up to 5 millimeters thick. Cut the pepper into strips, cubes or half rings, up to 5 millimeters thick. We spread the sliced ​​products into separate plates.

Step 4: form the pizza.

After 5 - 6 hours spent in the cold, the dough rose a little, we take it out of the refrigerator and remove the kitchen towel from the container. Turn on and preheat the oven to 190 degrees Celsius. We take the remaining half a glass of flour, sprinkle it on the kitchen table and put the dough in it. We make easy kneading and then, using a rolling pin, we roll out the semi-finished flour product into a round layer under a container or pan, in which we are going to cook pizza. Sprinkle a container for baking 2 - 3 with a pinch of flour and place rolled dough in it. We level it with clean fingers around the entire perimeter of the pan. Take a tablespoon and use it to apply a thin layer of tomato sauce to the raw dough. On top of it we spread the sliced ​​cheese and evenly distribute the crushed processed cheese. Immediately on 2 types of cheese we spread sausage and boiled pork in an art mess. Then come mushrooms, olives, sweet peppers and leek rings. Now the resulting layers of pizza are lightly salted and sprinkled with a mixture of Italian herbs. After falling asleep all layers with chopped cheese.

Step 5: bake pizza.

We check whether the oven has warmed up to the desired temperature and only after that we put pizza in it on an average rack. We bake the "culinary masterpiece" until fully cooked for about 20 - 25 minutes. During this time, the dough is baked, and the surface of the pizza is covered with a light golden ruddy cheese crust. After the required time has passed, remove the form with the finished flour product from the oven, holding it with a kitchen towel, and put on a metal wire rack, allowing the pizza to cool slightly.
