Cooking ravioli with goat cheese and herbs:

Step 1: prepare the dough.

Ravioli dough is prepared very quickly and simply. Set a sieve over a deep plate or other container and sift the two types of flour together. Thus, we will prevent the formation of lumps that should not be in the test, and saturate the flour with oxygen. Next, we wash eggs under running water from various kinds of contaminants and dry them with paper kitchen towels. Then with our hands we make a small depression in the flour, and break the eggs there, salt. After, we begin to knead the dough, right in the container until smooth. As soon as we get an even test ball, wrap it in a plastic wrap so that it does not absorb any odors and put it in the refrigerator 30 minutes. In the meantime, prepare the filling.

Step 2: prepare the ingredients for the filling.

Onions - shallots with a knife, peel and rinse under cool running water. After, put it on a cutting board and cut into small pieces up to about 7 millimeters in size. In the same way, grind the rest of the onion ingredient and put it on a plate. Then, we wash the parsley and onion greens under running water. Shake them off the excess liquid over the sink and put them on a cutting board. Then, using a knife, cut the green ingredients very finely and set aside.

Step 3: prepare the filling.

Turn on the temperature of the plate to an average level. Pour about 1 tablespoon of vegetable oil into the pan and transfer the chopped shallots into it. We put the pan on the burner and begin to fry the onions. At the same time, so that it does not burn out periodically mix it with a kitchen spatula. And as soon as the onion is completely softened, add chopped greens and a little tomato paste to it. Using, again, a kitchen spatula, mix all the ingredients together. Next, we reduce the temperature of the stove to a small level and transfer the necessary amount of goat cheese to the pan. Stir the mass until the cheese is completely softened, and then turn off the burner.

Step 4: form the ravioli.

We take the test ball out of the refrigerator and free it from the cling film. We shift it to a flat surface, previously sprinkled with flour and using a rolling pin, we begin to roll out the dough into a thin layer. So that the dough does not stick to the rolling pin, it can also be processed with flour. The layer is rolled up to a thickness of approximately 2 to 3 millimeters, and the thinner the test layer, the better. Then squeeze the circles with the help of a glass. After, we put the filling in the center of each. And we fasten the edges together using a fork, giving the ravioli a crescent shape. In the same way, we form all the other ravioli until we have the filling or the dough finished.

Step 5: boil the ravioli.

We turn on the temperature of the stove to a high level, pour water into the pan and put on the burner. After the water boils, add salt to taste and reduce the temperature to an average level. We put our ravioli in boiling water and boil it. After they surfaced, cook them for another 1 - 2 minutes. Next, we take the finished ravioli out of the pan using a slotted spoon and can be served.

Step 4: serve ravioli with goat cheese and herbs.
