Cooking a rabbit under rose wine:

Step 1: prepare the rabbit.

First, we need to cut the rabbit. To do this, wash the carcass under running water and dry it with paper kitchen towels. Then we put it on a cutting board and proceed to cutting. Next, using special scissors or a sharp knife, we first cut the front paws on the shoulder, where the joint, and then the hind legs, on the thigh. After, the body is cut across into 2 parts. Step 2: prepare the vegetables.

We carefully wash the cherry tomatoes under running water, then dry them with paper kitchen towels and put them on a cutting board. Using a knife, cut the ingredient into circles with an approximate thickness of 1 millimeter. And we shift the crushed ingredient into a small plate. Then peel the red onion, rinse it under running water and put it on a cutting board. Next, cut the ingredient into rings, the finer the better. It is convenient to do this so, first we cut off the root part, then the top and gently holding the onion we continue to cut it across. Leave the onion rings on the cutting board.

Step 3: bake the rabbit in wine.

Preheat the oven to 180 degrees Celsius. Add a little olive oil to the baking dish and put the meat slices. Then sprinkle them with salt, black pepper and saffron. After the required amount of time has passed, we take out the form from the oven, release the container from the foil. And on top lay chopped cucumbers and cherry tomatoes. Raise the oven temperature to 210 - 220 degrees Celsius. Again, sprinkle with olive oil, salt and remove the bake, but without the foil. We bake until the meat pieces and vegetables get a beautiful fried crust of golden brown color. We take out the fragrant rabbit meat from the oven, add the basil leaves and can be served.

Step 4: serve the rabbit under the rose wine.

Using a kitchen spatula, we lay out the meat slices portionwise on plates. This dish is considered the second and served hot. You can prepare any side dish for it, for example mashed potatoes, buckwheat or rice groats, pasta and much more. You can serve such a rabbit with the same wine or any other drink.
