Cooking fried octopus in spicy sauce:

Cook seafood 4 - 5 minutes after boiling water. Then throw it in a colander, let it drain water, then put it in a bowl of cold water and let cool. Put pieces of the cooled octopus on a cutting board and peel them off, helping yourself with a knife. Then put the slices in a deep bowl. Peel the ginger root, onion and garlic, peel the stalk of hot pepper, wash the vegetables under cold running water, from seeds and any other contaminants. Then put them on a chopping board and chop finely, the pieces can be of any shape, but their diameter and thickness should not exceed 7 mm. Arrange the ingredients in separate plates. Mix the spices indicated in the recipe in a separate bowl with a tablespoon.

Step 2: cook the fried octopus in a hot sauce.

Turn the stove on to a medium level and place a pan with the right amount of vegetable oil on it. After the fat is hot, put the garlic in a pan and simmer it 2 - 3 minutes until a strong garlic flavor. After that add sweet onion to the garlic and fry it until it becomes soft and slightly transparent. This process will take you no more 3 to 4 minutes. Fry the onion and bring it to full readiness is not necessary! Stir the vegetables periodically with a kitchen spatula to evenly fry and to avoid sticking to the bottom of the pan. Add the ginger root and saute the vegetables together yet 1 minute Then add hot red pepper to the total mass. Put in the pan all the spices indicated in the ingredients and simmer the vegetables for 2 - 3 minutes stirring occasionally. Then add salt to taste. And for sweetening, put sugar. Enter the right amount of apple cider vinegar. And the last most important ingredient! Put the octopus in the hot vegetable mass, mix the ingredients with a kitchen spatula and simmer them together 30 to 40 seconds. Then add the required amount of clean distilled water to the pan, screw the temperature of the stove to the lowest level and put out the almost finished dish 3 to 4 minutes. Then turn off the stove, cover the pan and let the octopus brew in hot sauce 5 to 10 minutes. Then, using the slotted spoon, place the octopuses on a plate, pour the sauce and taste forwards. The remaining octopuses can be put in a clean, dry jar and stored in the refrigerator for 7 - 8 days, during this time they will marinate in hot sauce and will be even tastier.
