Lazy Lecho


Ingredients for Making Lazy Lecho

Cooking a lazy lecho:

Step 1: Prepare the vegetables for cooking lecho.

First you need to thoroughly rinse the peppers under cold running water, then remove the stem and cut them in half. After that, it is very important to thoroughly remove the core of pepper, consisting of veins and seeds, and again thoroughly rinse the vegetables under water to remove all remaining seeds. Then lay the halves on a cutting board and cut it into strips. Next, peel all onions from the husk. In order to prevent tears from flowing during this process, it is necessary to dip the knife periodically into cold water during cleaning and not to immediately cut the so-called “tails”. In fact, this is the place that used to be a stalk. When it is cut from the fruit, juice begins to leak out, which causes tearing. Already peeled onions must be rinsed under cold running water and put in a bowl, then completely pour it with the same cold water. After that, grind all its quantity not too thin half rings, while already cutting off the "tails".

Step 2: Prepare a pickle for a lazy lecho.

After that, take a suitable pan. Combine in it clean filtered water (or cooled boiled water), granulated sugar and salt. Put on high heat, stir until salt and sugar are completely dissolved. After this, pour vinegar and vegetable oil into the pan, mix everything thoroughly. Next, send tomato paste, ground black pepper to taste and previously washed bay leaves in the water. Bring the mixture to a boil, reduce the heat slightly and let it boil for about 5 minutes.

Step 3: Add pepper and onion to the pan.

Add chopped bell pepper and onion to the prepared mixture, mix well, reduce heat to medium and let the mass cook 15-20 minutes. Step 4: Sterilize the jars. While our lecho is being cooked, be sure to sterilize the cans and lids. This can be done in a variety of ways. You can use any more suitable for you. But the most effective is rightfully considered a method of steam sterilization. For this, the cans must be installed upside down on a grid or metal sieve over a boiling pot of water. The process takes time about 15 minutes. The lids must be placed in a pan, pour them with cold water and put on a slow fire. Sterilization time for caps after boiling is 5-7 minutes.

Step 5: Serve the lazy lecho.

Put prepared lecho in prepared jars and roll them up. Wrap a warm blanket on top and leave it as such for several days. After that, put it in the pantry or other dark place and store there rolled up lecho on demand. Good appetite!

Recipe Tips:

- - Before you begin to sterilize the cans and lids, they must be thoroughly washed in water from dust and debris. In this case, in no case should you use any chemical cleaning and detergents. If necessary, with severe pollution, you can only use baking soda, but it also needs to be washed very well.

- - After sterilization, the jars must be laid upside down on a clean kitchen towel. This is necessary so that all the droplets drain, and the dust does not settle on the inner walls of the can. Moreover, in the future it is advisable not to touch the jar with your fingers and other objects. All this contributes to the safety of seals for a long time.
