Cooking pork stew with pumpkin:

Step 1: Prepare the ingredients for cooking.

First we take the meat, rinse it with running water and dry it with a paper towel. We clean the meat from veins and films and cut it on a cutting board with straws or cubes. For stewing, you can take almost any part of the pork, but I prefer to work with the fillet. I also wash the vegetables and cut them as follows: pumpkin - diced, chopped onion, let the tomatoes and garlic pass through a meat grinder, or chop it with a blender to fill it. So, our ingredients are ready to cook, go to the next step.

Step 2: Stew the pork with pumpkin.

Pour a little vegetable oil into the pan and fry the pieces of meat until they become light golden in color. We shift them into a plate to free the pan so far. In the same frying pan, fry the onions until transparent, lay the pumpkin on top and continue to fry, stirring constantly, for 5 minutes. Then add the tomato - garlic dressing, season with spices, cover the pan with a lid, reduce heat and simmer for another 15-20 minutes. The pumpkin must soften slightly before we add it to the meat. We return the meat to the pan, mix well, cover and simmer over low heat until cooked for another 20 minutes. If you wish, you can add sour cream, but even without this, the pumpkin will steam up and turn into a sweet amazing sauce.

Step 3: Serve the pork stew with pumpkin to the table.

Like any other stew with a rich taste and aroma, it is best served with a side dish that will not compete with the brightness of the taste. As such a side dish, you can offer rice, boiled potatoes, pasta. Serve pork stew with pumpkin must be hot and always with gravy. You can decorate the dish by adding a sprig of dill or parsley, or just sprinkle with herbs. Enjoy your meal!

Recipe Tips:

- - Instead of tomatoes, you can use tomato paste.

- - The taste of the pumpkin is quite mild, so it is very suitable spices - cumin, pepper, oriental mixes. You can add whatever you like.

- - When stewing meat, lift the lid as little as possible so as not to lower the temperature inside the dishes. To speed up the stewing process, you can add a little pomegranate juice to the dishes.
