Cooking juicy beef in the oven:

Step 1: Marinate the meat.

For the marinade we will need: coarsely chop one carrot and one onion. Then finely chop the greens and break 5 leaves of bay leaf. Put in a pan a whole piece of meat, you can cut in half, but not finely. Pour it with wine and add: onions, carrots, parsley, bay leaf, 4 buds of cloves, rosemary. Put all this in the refrigerator for 12 hours, and preferably 18, so that it is well insisted. It is advisable to make a marinade the day before you decide to start cooking meat.

Step 2: Cook the meat.

After long stewing the meat in the marinade, we take it out and put it in the pan. Do not forget to dry it with a paper towel or napkin. Fry the beef in a preheated pan with a little olive oil. Also salt and pepper it.

Step 3: Bake and serve.

Let's get rid of vegetables, for this you need to strain the whole mixture in drushlag. Put the meat in a baking pan and decorate with vegetables, namely: peel the onion, cut in half and fill with bay leaf, we will get some flowers. After we peel the carrots, wash and cut into two parts. We cover the carrots around the meat. Pour marinade peeled with vegetables. And cover the pan with a lid. We will stew meat in a preheated oven to 200 ° C, about 2 hours, periodically pouring liquid from a pan so that the meat does not burn. If all the liquid evaporates, then the remaining marinade will have to be added. The sauce resulting from cooking meat is filtered from excess pieces, passaged and evaporated to 250 ml. Dilute 1 tablespoon of starch in 50 ml. water and add to the sauce, leave to boil a little, until the sauce thickens. Serve the prepared meat with cooked sweet and sour sauce.
