Cooking compote from zucchini:

Step 1: prepare the zucchini.

Zucchini wash under running water. With a knife, peel the zucchini. Then, on a cutting board, cut the zucchini in half and remove the seeds with a spoon or hands. Cut the resulting pulp of zucchini with a knife on a cutting dock along on 5-6 strips, which are then cut into pieces similar to the cut parts of a pineapple ring.

Step 2: prepare the compote from zucchini.

Sliced ​​zucchini put in a pan, pour water. On medium heat, cook zucchini until boiling, then add granulated sugar. Stir the squash with sugar with a spatula and continue to cook over low heat. When the slices of zucchini become transparent, add cloves.

Step 3: roll compote into jars.

Remove the pan from the heat and add vinegar essence. Stir the compote with a spoon. We sterilize banks in any way. When I use small cans, it’s more convenient for me to sterilize everything in a double boiler. We put clean cans and lids in a double boiler for 5-7 minutes. Then pour the hot compote into cans and close the lid with a rolling key. Banks are covered with a towel and put in a dark place for 1-2 days. Store stewed zucchini in a cool and dry place.

Step 4: serve the compote from zucchini.

Pour compote into glasses and serve. You can put a few slices of zucchini in each glass. Enjoy your meal!

Recipe Tips:

- - In a compote of zucchini, you can add 1-2 handfuls of cherry plum or thorns, a little zest of lemon or orange. If there is a lot of lemon zest, then the compote will have a pronounced lemon flavor.

- - In order to make the pineapple taste more pronounced in compote, you can add 0.5 liters of pineapple juice during the cooking of zucchini. - Instead of vinegar essence, you can use citric acid.

- - If you plan to drink compote from zucchini immediately, then you can add 1 tablespoon of gin to the finished compote.
