Cooking meat mix "New Year's":

Step 1: Preparing the meat for the mix.

Fresh meat must be thoroughly washed, then dried a little with paper towels. Next, cut off all the films from each piece. In the pork neck along the entire length, we make longitudinal cuts, but not completely. In other words, we cut first on the one hand, and then on the other. Do not cut necessary about 1 centimeter. And the thickness of the pieces themselves should be from 1 to 2 centimeters. Cut the chicken fillet and beef into pieces about 1 centimeter thick. Next, dry spices (cumin and oregano) must be ground in a mortar, add them to a mixture of wine vinegar with olive oil. Beat the mass thoroughly, after which we add salt to taste and white ground pepper to it. After that you need to thoroughly grease all the pieces of meat with this mixture. Pork must be smeared in each cut. Leave the meat in this form for a little marinate 10 minutes.

Step 2: Prepare the fillings for the meat mix.

In the meantime, prepare the fillings for the mix. These are the ingredients that will enrich the taste of the meat dish and make it rich and vibrant. We will have 2 fillings, so pre-prepare deep plates for them. Wash dill and parsley and chop finely. We divide them into two parts, since greens will be the basis of both fillers. Next, add finely chopped walnuts and chopped hot peppers into rings in one plate. In addition to dill and parsley, cranberries will be included in another filling, but it must first be thoroughly washed and drained.

Step 3: We form the dish.

Now that all the preparatory moments are done, you can start stuffing the pork. We put a piece of beef in one cut. On one side we lay greens with walnuts and a ring of hot pepper and press firmly on the pork, and on the other hand we also lay out the filling and press again. In the next slot we lay the chicken fillet, but we already use the filling with cranberries. In the same way, one by one we fill all the slots in the pork. After all the meat is stuffed, wrap meat very tight culinary thread.

Step 4: Prepare the product.

Place the meat product in the baking sleeve and close it. Preheat the oven. to a temperature of 200 degrees and send the meat mix to the roasting pan for 2 hours. We take the finished dish out of the oven, let’s cool it and send it directly in a bandaged form. in the refrigerator for at least 12 hours. At the same time, you can pack it in a very narrow container or put it under a press. This is necessary so that all elements of the mix are well compressed and not fall apart when sliced.

Step 5: Serve the New Year’s meat mix.

At the end of the set time, we remove the dish from the refrigerator, remove the threads and cut into thin slices. This will be easiest to do with a very sharp knife with a long blade.
