Step 1: Soak the gelatin.For those who have not used gelatin before and do not know what it is, I will explain that gelatin is a thickener obtained from beef and calf bones. It has no taste, no color, no smell. And working with it is easy enough, you just need to observe some subtleties. One of them - you need to accurately measure the amount of gelatin used, otherwise the dish may turn out rubber or not work out at all. Pour gelatin into a deep dish and pour it with cold boiled water for 40 minutes. While he is soaking, we proceed to the next step.
Step 2: Make a mousse blank.The berries you have chosen must be washed and sorted properly. Any berries are suitable for mousse, I personally chose strawberries. If you want to get a sweeter taste, raspberries are best, if on the contrary, acidic, then I suggest making mousse with currants. And, of course, you can make assorted, it will turn out even more interesting. Beat sour cream and sugar with a mixer or whisk until sugar is completely dissolved. You can replace sugar with honey or powdered sugar. Add a little vanillin to give a delicate delicate aroma. We take a pre-prepared form for dessert, I draw attention to the fact that it is better to use glass dry dishes, since fat accumulates the least in it, because there should be no extraneous odors in our dessert. We return to gelatin - put it in a water bath and heat, stirring, until completely dissolved. In no case do we give the gelatin to boil, otherwise its ability to thicken will decrease. Another rule - when mixing gelatin with sour cream, they should be about the same temperature. Therefore, cool the gelatin and add to the whipped sour cream. Pour the obtained mixture of berries in the form and put it in the refrigerator. If for a holiday you want to present this dessert personally to each guest, then you can cook it in small portions and play with the form, for example, pour the mousse of berries in a glass or gingerbread bowl. Imagine and experiment more often!
Step 3: We make and serve sour cream and berry dessert.When the sour cream mousse hardens, we take it out of the refrigerator and lower it into hot water for a few seconds. This is necessary so that the edges of the mousse are detached from the walls of the mold and we can easily get it. And for this, we turn the form on a beautiful dish and the finished mousse smoothly slides into it. We decorate our dessert with berries and a couple of leaves and serve to the table!
