Step 1: Cook the dough.We take a deep dish, break eggs there, add sugar and beat with a mixer or whisk until sugar dissolves. Slightly enhance the taste with a pinch of salt. Add the cottage cheese and beat the dough again to stir everything properly. We extinguish a quarter of a teaspoon of soda in vinegar and put in the dough, beat again or mix thoroughly with a spoon. Add melted and chilled butter, rum, mix and gradually pour the flour. It is worth noting that for the vergunov make a cool dough.
Step 2: Roll out the dough.Choose the surface on which we will roll out the dough. It can be a table or a cutting board, to whom it is more convenient. In order to prevent the dough from sticking, you can roll the rolling pin and flour rolling place. This option is preferable and is used if the dough is then baked in the oven. But in our case, we will fry the verguns in a frying pan or in a cauldron, so we will lubricate both the table and the rolling pin with a small amount of vegetable oil. We spread the dough and roll it into a layer 3 mm thick. Then we cut it into strips 2.5 cm wide and 10 cm long. And go to the next step.
Step 3: Form the Verguns.Here you can show all your imagination and ingenuity. Traditionally, the verguns form this way: they fold the strip in half, twist it into a pigtail, and the ends are blinded. If it doesn’t work the first time, don’t be upset, “Moscow wasn’t built right away.” Try, fantasize, you can entrust such a fun and responsible task to children, they will be happy, and as a rule they have more than enough enthusiasm for them. In any case, an unsuccessful option can be molded into a ball and you get a kind of mixture: donut-vergun.
Step 4: Fry the verguns, arrange and serve.Verguny is a traditional dish of Ukrainian cuisine. It also does not do without salt, or rather fat, smelted from it, which is called lard. Lard can be replaced with fat or ordinary vegetable oil. So, in a frying pan, a cauldron or a stew-pan, plentifully greased with fat, we lay out our verguns. There should be a lot of oil or fat, so that the scavengers float freely in it, without touching the bottom of the dishes. Fry them on both sides until golden brown, for 1-2 minutes. We take out the finished verguns with a slotted spoon, put them on a paper towel to get rid of excess fat. After the verguns cool down a bit, put them in a beautiful dish, generously sprinkle with powdered sugar and go drink tea! Enjoy your meal!
