Cooking tench in sour cream:

Step 1: Prepare the tench.

First of all, the tench must be gutted. To do this, make an incision along the abdomen along the entire body from head to tail and get the insides. After that, we cut out the gills and clean the scales: we hold the fish with our left hand, and with the right we scrape the scales with a sharp knife. It is better to hold the knife not vertically, but at a slight angle - in this case, the scales will not scatter in different directions. We wash the line with cold running water from the outside and from the inside, we pay special attention to the abdomen. The washed tench is cut into pieces and put them in a pan. Fill the line with warm water, to which we add vinegar and 1 tbsp. a spoonful of salt. In this water tench must be infused 20-30 minutes, it relieves the fish of the bitterness and smell of silt (tench lives in muddy ponds).

Step 2: Prepare the vegetables.

Peel the onion from the husk, scald with boiling water and cut into small pieces. Wash bell pepper, scald with boiling water, remove the stalk, clean the seeds and also cut. We take a small saucepan, pour vegetable oil into it, put onions and peppers and simmer them over low heat 15-20 minutesstirring occasionally until the pepper softens. My greens under cold running water, scald with boiling water and chop finely.

Step 3: Cook the tench in sour cream.

We merge the water in which the tench was infused, rinse it with cold running water, then fill it with cold water and put the pot with the tench on a slow fire. Add bay leaf and salt to the line. Boil the fish until half ready (10-15 minutes) Pieces of fish are transferred to the pan to the onion and pepper. Fill the tench with wine, add a little chopped cilantro, cover the pan with a lid and simmer the tench on low heat for about 10 minutes. Then add sour cream and greens to the line and simmer for about 10 minutes until ready.

Step 4: Serve the tench in sour cream.

Serve the prepared tench in sour cream on plates and serve to the table with potatoes, vegetables and herbs. Enjoy your meal!

Recipe Tips:

- - To get rid of bitterness, you can also rub the line with vinegar and leave for 10 minutes.
