Cooking a cake from the liver:

Step 1: prepare the liver.

Since we are going to make a cake from the liver, the main ingredient in us is the liver itself. I must say that it still needs to be properly prepared. So, the liver is thoroughly washed in water, using a small and sharp knife we remove the film from it. After we place it in a deep bowl and fill it with milk. It is important that milk completely covers the entire surface of the liver. She must get wet about 2-3 hours. This step is the most important. Milk will help to “clean” the liver, remove the specific smell and taste, and also give it tenderness.

Step 2: prepare the rest of the ingredients.

Go ahead. We will need hard-boiled eggs, so before you start cooking the cake, you need to cook them in a small saucepan. I think three pieces will be enough. Once they have cooled down and they can be picked up, clean them and gently separate the yolk from the protein. Protein can immediately be cut into small cubes with a knife. Grate the yolk on a fine grater. We take our onions, wash them thoroughly under running water, with a knife we clean and cut as finely as possible. Pour the finished chopped onion into a separate bowl. Carrots, after washing, rub on a fine grater.

Step 3: prepare the filling for the cake.

We put a frying pan on the stove, pour vegetable oil, pour our finely chopped onion into it and fry it until half ready. Then add grated carrots to the pan. All this is thoroughly fried. We cut the tomatoes into slices, in contrast to the greens, which we finely chop. Pour the peeled garlic at the garlic press and add to the mayonnaise. Mix.

Step 4: prepare the liver cakes.

We take our "wet" liver, wash it under running water and pass it through a meat grinder. Pour the liver mass into a separate bowl. We drive in 1-2 eggs there, pour in milk (about 100 grams), mix. Pour flour (100-120 grams) - mix. Salt to taste. Next, put the pan on the stove (you can use the one on which we fried onions and carrots), pour a little vegetable oil, wait until it becomes hot. Next, take a spoon, gain hepatic mass and spread it on the pan. Fry this pancake on both sides 5 minutes each to each side. The result should be 5-6 pancakes.

Step 5: collect our liver cake.

We put a liver pancake on a plate, gently grease it with garlic mayonnaise, add carrots and onions on top, cover with the next pancake and again perform the same actions until the pancakes finish. Grease the top of the cake with mayonnaise and sprinkle with finely chopped egg white. You can try to brush the sides of the cake with yolk, but this is with the appropriate level of skill. Even if you don’t cover it with taste, it will not affect in any way. In conclusion, sprinkle with chopped greens on top and decorate with tomato slices. All the liver cake is ready. It is advisable to soak the cake before serving within 1-2 hours.

Step 6: serve to the table.

Personally, I really like the taste of this cake and from time to time I indulge myself in its preparation, especially since there is nothing complicated in the cooking process. Enjoy your meal!

Recipe Tips:

- - boiled eggs are very well cleaned if they are immediately put in boiling water in cold water and allowed to cool;

- - when choosing a liver, it is advisable to stay on beef, as it has a more saturated taste and less stiffness;

- - the liver can also be passed through a blender, not necessarily through a meat grinder;
