Cooking meringues "Wind crystals":

Step 1: Beat the whites.

Separate the whites from the yolks. To do this, take two bowls. Put one of them in front of us and with a careful clear movement break the egg in the middle on the edge of the bowl, and then break the shell into halves. Pour the yolk from one shell to another until the protein has completely separated and is in a bowl. Put the yolk in another bowl. Egg white start beat with a whisk with intense movements in one direction. When it turns into a transparent yellowish liquid foam, pour cold water into it, without ceasing to whisk. We continue to whisk more 3-4 minutes during this time, the foam should become denser and more magnificent (but not yet thick and upright). Add sugar to it, which we pour in a thin stream, also without ceasing to whisk. For sugar, immediately pour the icing sugar in the same way. Continue to beat until thick foam. Do not whisk for a very long time, the squirrels are ready already when they stay on the whisk and do not drip from it. Estimated whipping time - 5 minutes from the moment of filling with icing sugar. The exact time depends on the intensity of the whipping.

Step 2: Bake the meringues.

Preheat oven to 120 degrees. We put parchment paper on a baking sheet and put beaten squirrels on it in small heaps with a tablespoon. Put the pan in the center of the oven and bake the meringue with the door closed 40 minutes. During this time, meringues should acquire a uniform cream shade. Then we reduce the temperature in the oven to 100 degrees, turn on the fan and continue to dry the meringues yet 1 hour, but the oven door is now left open. Do not be surprised if after an hour you find the meringue too soft and not dried. It will harden both from above and from the inside literally a minute after you take out the baking sheet from the oven.

Step 3: Serve the wind crystals meringue.

Remove the prepared meringue from the baking sheet, put it in a vase and serve for tea. Enjoy your meal!

Recipe Tips:

- - Experts advise to whip the proteins manually, however, if you wish, you can use a mixer.

- - It is better to turn on the oven before you start whipping the squirrels, and also to cover the pan in advance with parchment paper. Proteins should be set to bake as quickly as possible after whipping.

- - If your oven does not have a fan, you can do without it by simply leaving the oven door open.

- - Store prepared meringues in a dry place.
