Senatorial Cake


Ingredients for making Senatorial cake

For meringues:

  1. Squirrels 6 pcs.
  2. Sugar 1.5 cups

For coffee cream:

  1. Milk (any fat content) 3/4 cup
  2. Instant coffee 3-4 tsp
  3. Premium wheat flour 1 tbsp. a spoon
  4. Yolks 4 pcs.
  5. Sugar 1/2 cup
  6. Butter 200 gr.

Cooking Senatorial Cake:

Step 1: Cook the meringues.

Squirrels are separated from the yolks. To do this, take two bowls. Put one of them in front of us and with a careful clear movement break the egg in the middle on the edge of the bowl, and then break the shell into halves. Pour the yolk from one shell to another until the protein has completely separated and is in a bowl. Put the yolk in another bowl. Beat the whites with a mixer at medium speed, gradually, in a spoon, adding sugar to them. Squirrels whisk white dense "standing" foam. We put baking paper on the baking sheet and spread the meringues in portions using a pastry syringe or spoon. Put the baking tray with meringue in the oven and dry the meringue at a temperature 100-130 degrees 1-1.5 hours. Cooking time depends on the size of the meringue.

Step 2: Prepare the coffee cream.

Pour milk into the pan. We heat the milk, but do not boil it. Dissolve coffee in milk, then pour in the flour and mix thoroughly. Grind the yolks with sugar using a whisk or mixer. We mix the yolks with milk and, stirring, bring the mixture to a boil. Turn off the stove and cool the mixture. We take out the butter from the refrigerator in advance so that it has time to soften. We cut the soft butter into pieces and beat with a mixer, gradually pouring custard milk with yolks into it. Beat until we get a cream of uniform consistency.

Step 3: collect the cake.

We take the finished meringue out of the oven, coat it with cream on all sides and put it in the form of a slide.

Step 4: Serve the Senatorial Cake.

Before serving, sprinkle the cake with pieces of walnuts, almond petals and grated chocolate and serve the finished cake for tea. Enjoy your meal!

Recipe Tips:

- - Beat the squirrels very carefully, and don’t sprinkle sugar immediately, otherwise the meringues may “fall” in the oven.

- - For impregnation, the cake can be put in the refrigerator overnight.

- - The shape of the cake can be varied: bake meringues with round cakes or small rectangular cakes, lay them on top of each other and coat the layers with cream.

- - For the smell of vanilla in meringue, you can add vanilla sugar.
