Cooking almond cake "Lynch":

Step 1: Grind the almonds.

Using a blender or a meat grinder, grind our almonds. Attention! If some nuts are not completely crushed, you can to leave, they will give the dish its own specialty.

Step 2: Mix the ingredients for the cakes.

Almonds, sugar, proteins and half a bag of vanillin are thoroughly mixed.

Step 3: Put the mixture in a water bath.

A water bath is necessary for our ingredients so that sugar can dissolve. It will take about 10 minutes. Attention! Do not turn on too strong fire, since the mass can be caramelized. The finished mixture becomes whitish. After that, turn off the water bath and let the mixture cool.

Step 4: Lining the baking paper.

We line the bottom of the form with parchment paper, which we carefully coat with butter.

Step 5: Divide the dough and bake the cakes.

Our cake should have 3 cakes, so before baking, the dough is divided into 3 parts. Each cake is baked separately. Pour one part of the dough into a mold and bake it in the oven at a temperature of 170 degrees for 20-25 minutes. Repeat the procedure with the remaining test. Ready cake has a “dry” structure, so before you take it out of the oven, pierce the edge with a match or a toothpick (if they are wet - it should be baked again, in the same mode).

Step 6: Disconnect the cakes from the paper.

Pre-greased paper, easily detaches from the cake layers, preventing their deformation.

Step 7: make the cream.

Cream will be served by Italian mascarpone cheese, which can be bought at any supermarket. This product, which has a delicate creamy taste, is mixed with vanilla and powdered sugar.

Step 8: Coat the cakes.

Cakes are abundantly soaked in the resulting cream.

Step 9: Decorate the cake with fantasy.

Cake can be decorated in different ways: by rubbing chocolate, sprinkling it with grated or whole nuts. For decoration, you can use several types of chocolate: milk, white, bitter and several types of nuts: almonds, walnuts, forest, etc. To impregnate this confectionery, it is necessary to put it in the refrigerator for 2-3 hours.

Step 10: Serve the Lynch almond cake.

The presentation of this most tender cake in structure does not differ from the generally accepted one. It can be served whole or cut into portions. A sprig of mint or currant with green leaves will look spectacular on the top of the cake. Enjoy your meal!
