Frozen puffs


Ingredients for Making Frozen Puffs

  1. Premium wheat flour 500 grams.
  2. Milk (any fat content) -230 ml. taste
  3. Pork fat 150 grams.
  4. Sugar 75 grams.
  5. Chicken egg 2 pieces.
  6. Dry yeast 12 grams.
  7. Olive oil 2 tablespoons.
  8. Salt to taste.
  9. Powdered sugar for decoration.

Preparation of frozen puffs:

Step 1: brew the yeast.

Mix the whisk in the bowl with flour, salt and granulated sugar. In the center of the mixture we will make a deepening, put the yeast, a pinch of sugar and fill it with half a glass of warm milk. Mix a little with a spoon. Cover the bowl with cling film and leave in a warm place for 15 minutesuntil the yeast dissolves and until bubbles appear on the surface of the mixture.

Step 2: prepare the dough.

Add eggs, the rest of milk and olive oil to the bowl. In a mixer with a nozzle for dough, mix all the ingredients until the dough is folded into a ball. When the dough is ready, the walls of the mixer should remain clean. The dough is a little sticky, soft, does not leave marks on the hands. Cover the bowl again with foil and leave in a warm place for 30 minutes.

Step 3: prepare blanks for puffs.

We spread the dough on the working surface and divide it with a knife into 10 identical parts. Hands roll each part into a ball, cover them with foil and leave for half an hour.

Step 4: prepare the pork fat.

We turn the oven on to a minimum fire. Put the pork fat in a preheated oven for 5-7 minutes.

Step 5: prepare frozen puffs.

Sprinkle each ball of the billet with flour, and roll out the rolling pin into a very thin layer in the form of a circle or rectangle, as you prefer. Lubricate the circuit board with pork fat and roll it into a tourniquet. Transfer to parchment and fold in the form of a "snail". Lubricate the obtained snails with pork fat, cover with a film and leave in a warm place for 1-4 hours. After the puffs are infused, they are neatly placed in the freezer.

Step 6: serve the frozen puffs.

Puffs out of the freezer, put on a baking sheet covered with baking paper and leave for half an hour at room temperature. Bake in preheated until 200 degrees the oven 14 minutes until golden brown. Put the finished puffs on the wire rack and leave for 2 minutes. Then we shift to a serving plate, sprinkle with powdered sugar, and serve warm to the table. Enjoy your meal!

Recipe Tips:

- - Instead of pork fat, you can use butter, but then the puffs turn out to be more standard, and they lose their amazing taste.

- - You can also cook puffs immediately after the last tincture.

- - When you put the puffs on a baking sheet, leave a space between them, as they will rise well.

- - It is advisable to store frozen puffs in the freezer for no more than one month.
