Muffins with vanilla pudding


Muffins:

In a bowl, mix the eggs with the sugar, which we gradually put until they become foam. Add the oil in a thin thread, mixing at low speed, then the yogurt. Incorporate baking powder, cocoa that we pass through a sieve and flour.

At the end we flavor the composition with rum essence. Prepare some forms of silicone muffins (or muffin tray) and fill them 3/4 with the composition prepared above.

We place them in a tray and put them in the oven. The temperature must be right and leave them until they are well cooked, about 25-30 minutes. We do the toothpick test for any eventuality! When they are ready, take them out of the oven and let them cool. We take them out of the forms, then with the help of a teaspoon we make a hole in them.

Pudding:

In a bowl mix the sugar, pudding powder and a few tablespoons of milk. We spin well with a whisk so that no lumps form. We boil the rest of the milk and when it boils we pour the pudding mixture. Turn the heat to low and let it thicken. Remove the pudding from the heat and add the butter. Stir gently with the whisk and let cool for 5 minutes.

We fill a pos with pudding and with its help we fill the holes we formed with muffins. We decorate them with chocolate popcorn.

Towards the end, add the starch mixed with the 30 g of water, and boil it until it thickens. Set aside and add the butter. Allow to cool.


5. After the dough has risen, divide it into 50 g balls and leave to rest for another 10 minutes. I got 14 pcs.


Each ball is stretched into a rectangle, greased with a little yogurt filling, then with a little apple filling (divide the two fillings evenly to reach all the muffins).


Cut the roll in half and place the two halves next to each other (with the cut up) and place them in muffin trays, on paper (in the absence of paper, grease the trays well with fat). Leave to rise for another 45 minutes. in trays. Grease with beaten egg. I usually grease with egg yolk mixed with a little milk.


7. Bake in the preheated oven at 190 degrees C for 15 minutes, or until golden.
