Greenland Salad Ingredients

Preparation of salad "Greenland":
Step 1: Prepare the ingredients for the salad.Preparing the ingredients will take us most of the preparation of the dish itself, so we will not waste time and begin. Let’s take shrimp first. If they are frozen, then you need to unfreeze it first, if fresh, then temporarily put them aside, and for now, pour a little water into the pan and add salt, put it on the stove. We cover the pan with a lid so that the water boils faster, and then put the shrimp and seasonings in boiling salted water and cook for about 5-7 minutes. It is better to track the moment when they emerge - because the time of their cooking depends on the size of the shrimp themselves. Turn off the fire, and give the shrimp time to brew, then take them out with a colander and let the excess water drain. Then they need to be cleaned of shells and cooled before adding them to the salad. Again, pour about 2 cups of water into a saucepan, salt a little and, bringing to a boil, pour into it, washed several times in a colander, rice. Boil it until cooked, stirring constantly, so as not to burn, for 20-25 minutes. Before adding to the salad, rice, like shrimp, needs to be cooled, to do this, fold it back into a colander and rinse with cold water. I specifically indicated in the recipe exactly long-grain rice, since it turns out to be friable - exactly the type that we need for the salad. Now a little about mushrooms. I advise you to use champignons, they are perfect for this salad, and it’s much easier to cook them. You can use canned mushrooms, as well as boiled or fried. This will affect the taste of the salad, but any option is good in its own way. In this recipe, I used canned mushrooms, which I need to get out of the jar, drain the marinade, and cut in half. If the mushrooms are not very large, then you can leave them as they are. Rinse the lemon, bell pepper, dill and onion with running water and do the following manipulations - cut the lemon in half and squeeze 3 tablespoons of juice into a plate; peel the onion and finely chopping it, scald it with boiling water to get rid of bitterness; cut the pepper, remove the core with the seeds, and rinse the remaining part and cut into small cubes.
Step 2: Preparing salad dressing.Prepare a salad dressing. Take a deep plate and mix the mayonnaise with tomato paste or ketchup in it. Now you need to beat the resulting sauce with a fork or a whisk to get the so-called uniform "pink mayonnaise." Dressing should be salt and pepper to taste.
Step 3: Cooking Greenland Salad.Now we need a deep salad bowl, in which we will cook and serve the salad. We spread our ready-made ingredients in turn - rice, shrimp, mushrooms, cubes of sweet pepper, chopped dill and onions. Water the salad with lemon juice, then mix it and season with "pink mayonnaise." Mix again and send to the refrigerator so that the salad is properly soaked and cooled. This will take 1 hour.
Step 4: Serve the prepared Greenland salad.You can decorate the salad with a sprig of dill, scallops, or lemon slices, as your imagination recommends. Serve the salad chilled in one large salad bowl. Its amazingly delicate taste will bring you a lot of pleasure! Enjoy your meal!
