Greek style chicken (with mint and lemon)


1. Heat the oven over medium heat; meanwhile we wash the chicken pieces, cut them into medium pieces and place them in a large tray. Separately prepare the lemon sauce, as follows: chop the mint leaves, grate the lemon peel and squeeze their juice to mix all the ingredients with the finely chopped garlic and the 6 tablespoons of oil.

2. Pour the lemon and mint sauce over the chicken pieces, salt and pepper to put everything in the oven for 20 min; from time to time we sprinkle the chicken with sauce.


3. For the salad, cut the cherry tomatoes into 4 and mix them with the feta cheese cut into small cubes, sprinkle with a little olive oil, add salt and pepper; we place everything on a lettuce leaf.

4. When it is browned, remove the chicken breast from the oven and place it next to the lettuce, sprinkling a few fresh mint leaves ...

Otherwise, you definitely have all the ingredients in your kitchen.

From the proposed quantities, you will get a meal for 4 people, 2 adults and 2 children. Of course, you can also use a larger chicken if you have a larger family.

Ingredient:
1.3 kg whole chicken (I used Axedum)
6-7 tablespoons olive oil
the juice of 1/2 lemon
1 clove of garlic
3-4 marinated green olives (optional)
sea ​​salt and white pepper

Training:
1. Wash and clean the chicken drumsticks. Dry it well with paper towels, on the outside and inside. Rub it with plenty of salt and pepper, including in the cavity.
2. Place it with your chest up on a tray greased with 2 tablespoons of olives. Fill the bird's cavity with lemon juice, garlic and those 3-4 green olives.
3. Using a silicone brush, grease the chicken with olive oil generously. Press another layer of salt over the chicken. The remaining oil, pour it into the bird's cavity. & # 8220Close & # 8221 the bird's cavity with a baking tape (found in baking packages) or with a thread, so that all the flavors in the cavity penetrate the meat.
4. Bake the chicken for about 1h30, pouring the sauce from the tray over it, using a brush. Let the meat rest for about 10 minutes before portioning and eating it. Thus the juices will remain in the meat.

We served this chicken with a yogurt sauce, which we prepared like this: we mixed 4 tablespoons of 10% Greek yogurt + 1 clove of garlic + about 10 finely chopped marinated green olives and seasoned with salt and white pepper. It doesn't even look like a recipe, but it completed our dinner very tasty.

The dishes prepared according to traditional Greek recipes are amazing - delicious, good-looking, fragrant and irresistible. A place of honor belongs to the dish called "keftedes" - meatballs with baked pumpkin. Thanks to the zucchini you get fluffy and juicy meatballs.

ingredients

-0.5 teaspoon finely chopped mint

-2 tablespoons tomato paste

Method of preparation

1. Wash the zucchini. Peel a squash, grate it and squeeze the juice. Drain the juice.

2. Mix the minced meat with the zucchini, crushed garlic, chopped onion, eggs, tomato paste and breadcrumbs. Add the dried basil, mint, ground black pepper and salt.

3. Line a baking tray with greased paper. Form the meatballs from the minced meat and arrange them on the tray.

4. Bake them in the preheated oven at 180 ° C for 30 minutes.

Note: Serve the meatballs with the traditional tzatziki sauce. Choose minced meat with a low level of fat. It can be beef, pork or mixed. If you choose chicken, cook the meatballs 10 minutes less. The meatballs can be served even cold - they will remain just as delicious.


Cut the chicken breast into cubes as for skewers.
Prepare a marinade from: 2 cloves of crushed garlic, 1 tablespoon of extra virgin olive oil, 1 tablespoon of lemon juice, 1 teaspoon of oregano, salt and pepper. Marinate the chicken stock cubes for about 2 hours.

Tzaticki sauce: peel the cucumbers and cut them into small cubes. In a blender mix: yogurt, ½ tablespoon extra virgin olive oil, ½ tablespoon lemon juice, 1 clove crushed garlic, finely chopped dill, salt to taste. The sauce thus prepared is kept in the refrigerator until serving.
Greek rice: Heat finely chopped onion and 2 cloves of garlic, also finely chopped. Dissolve the knorr cube in about 300 ml of warm water. When the onion and garlic have acquired a golden color, add the washed rice and warm water in which the knorr cube and the mint leaf have dissolved. Bring to the boil until the rice is almost low, remove from the heat and cover.

Remove the chicken pieces from the marinade and place on skewer sticks. The skewers are browned on the hot grill for about 5 minutes on each side.


How to make souvlaki

  • 1 kg pork, chicken, beef or lamb (according to preference)
  • ¼ grated onion
  • ¼ cup of lemon juice
  • ½ teaspoon of salt
  • ½ freshly ground pepper
  • A teaspoon of oregano
  • Two teaspoons finely chopped garlic
  • 2 teaspoons olive oil.

Method of preparation

The meat is cut into small cubes with a side of 3 cm and placed in a large bowl. In a bowl, mix the lemon juice, oil, salt, oregano, garlic, pepper and onion, mix well and put everything over the pieces of meat. Cover the dish and leave to marinate for a few hours, at least two hours, but not more than 12 hours.

When marinated, the pieces of meat are stuck on the skewers with little space between them and put on the grill to brown on all sides.


Greek style chicken with lemon, potatoes and tzatziki sauce

Oregano, lemon, tzatziki & # 8230 Greece described in three words. This country abounds in delicious and invigorating food. I plan to present you with a whole series of traditional recipes, which I learned from some pretty grandmothers.

  • 10 chicken hammers
  • 3 lemons
  • potatoes
  • oregano
  • extra virgin olive oil
  • salt
  • pepper.
  • 300 gr Greek yogurt with 10% fat
  • 6 fresh mint leaves
  • the juice of half a lemon
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon dill
  • 2 small cucumbers
  • 2 cloves of garlic
  • salt.

We start by peeling the potatoes, then we cut them into pretty pieces. In a bowl, mix the hammers with the potatoes, the juice of a lemon, 1 tablespoon of oregano, about 5 tablespoons of olive oil, salt and pepper.

All we have to do is place the above mixture in a tray lined with baking paper, then place lemon slices on top. Put the tray in the preheated oven at 200C for about an hour and a half.

When the hammers and potatoes are almost ready, we take care of the invigorating tzatziki sauce. To start, grate the cucumbers with the core removed, finely chop the mint and dill, then press the garlic.

In a bowl, mix the cucumbers, mint, dill, garlic, olive oil, the juice of half a lemon and salt with Greek yogurt. Thus, we obtain a delicious, cool and extremely fragrant tzatziki sauce.

Once the hammers and potatoes are ready, all we have to do is enjoy our taste buds with this explosion of flavors.


Simple and accessible illustrated recipes

This is, I think, the simplest recipe for baked chicken and at the same time, the tastiest. To prepare the chicken we need:

  • 1 chicken
  • Fresh mint (the dry one is also good, but this time I was lucky to receive some mint from my brother-in-law, who between us cooks better than me - if you don't have such generous brothers-in-law, you can also find fresh mint at the supermarket)
  • Half a lemon
  • Salt (to taste)
  • 1 tablespoon olive oil

Clean and wash the chicken, salt it, place it in a bowl and fill it with garlic. Cut the lemon into slices and place in a bowl with the mint. Add a cup of water and put the olive oil over the chicken.


Put in the oven for about 1 hour.


Method of preparation

Pour the couscous into a bowl and cover with twice the amount of hot water. Season with salt and cover the bowl. Season the chicken with salt, pepper, oregano and lemon peel, then fry it in a non-stick pan with a little olive oil.

While the chicken is frying, grate the cucumbers in a bowl, add salt and mix, then squeeze the cucumbers to get rid of the water. Add the yogurt, mint leaves, juice of half a lemon and a little pepper.

In a food processor, put the dill, bell peppers, hot peppers and green onions and mix everything. Place the composition on a large tray, add boiled or raw peas, olives, a little olive oil, lemon juice, soaked couscous and mix. Place the chicken on top, sprinkle with feta cheese and a little dill and your food is ready.
